Have you ever woke up and wanted something familiar but with a little bit of an edge? Well, that is what this Raspberry coconut oatmeal recipe is. You can use raspberries, blueberries, or any kind of fruit you like. If you’re not into fruit you can just add the cream on top.

I am not a huge fan of oatmeal, so when I woke up to extra oatmeal that my family made I had to think of a way to make it to my liking. The raspberries and the coconut cream gave it the added boost for me to feel happy about what I was eating that morning for breakfast.

Health Benefits

The reason I love this recipe is that the look of it almost seems like a dessert. It reminds me of a strawberry cupcake with white icing or ice cream with whipped cream on top. The way I prepared it almost made it seem like a dessert however the ingredients are all healthy.

This was made with sprouted rolled oats. Oats that are sprouted disintegrate antinutrient phytates improving the bioavailabilty of vitamins and nutrients. They’re also higher in magnesium and GABA than raw oats.

Another power house ingredient were the raspberries. Not only do raspberries help with diabetes management, they lower blood pressure, and help to prevent strokes and heart disease. Raspberries also contain vitamin C which helps produce collagen, just one of the ways that this fruit promotes skin health.

Raspberry Coconut Oatmeal

This filling breakfast is not only easy to make but also fast. If cooking for yourself you can save the leftover oatmeal and have it for breakfast the next day or even as an evening dessert for your sweet tooth.

Servings 3 people

Ingredients
  

  • 1 cup Sprouted rolled oats
  • 2 1/4 cup Water
  • 1/4 tsp Salt
  • 1/2 cup Raspberries
  • 1/2 cup Coconut Cream
  • 1/4 cup Sugar-Free Sweetener
  • 1 tbsp Grass fed Butter
  • 1 tbsp Maple Syrup

Instructions
 

  • In a medium pot bring salt and water to a boil.
  • Add the rolled oats and reduce the heat to low.
  • Cover with a lid that is tilted to the side.
  • Simmer for 5-10 minutes until it's tender.
  • While waiting, place raspberres into small pan on medium heat.
  • Cook for 2 – 5 minutes until raspberries are the consistency that you like.
  • Remove oatmeal from heat and add the butter sugar and raspberries.
  • In a small bowl mix the coconut cream with maple syrup.
  • Top your oatmeal with the coconut cream mixture.
  • Add a dash of salt on top to bring out more of it's flavor (optional)
