Shrimp Burrito Bowl | Easy Recipe

Mexican food is one of my favorites and although I haven’t mastered authentic Mexican I can pretty much tackle the basics. I’m sure you can too, which is why this non-recipe will be easy for you to follow.

One thing I realize is that Mexican food seems to always have rice and beans and although I am a fan of it, it does not work great with the keto paleo lifestyle, so the secret ingredient in this recipe is cauliflower rice.

I find that many people do not like cauliflower rice and I completely understand if it’s not for you, but I also believe it could be how it’s cooked. I remember when Chipotle added cauliflower rice for their low-carb customers. I tried it but to me it was soggy and the water would leach out into my bowl, which I’m not a fan of.

So I decided to add a little tip for how you can take the cauliflower flavor away and make it more rice-like. Please stay tuned for that info below.

Meal Idea

My definition of a meal idea is simply an idea of what you can cook without precise measurements or saying you have to use these exact ingredients.

I have re-created some great recipes by substituting what they use for things that are actually in my fridge and you know what it still came out good.

So I want to take this time to encourage all my readers not to fret if you don’t have everything that you see in my photos or whatever I place on the ingredients list. The things I list are things that you can use. They are not things you MUST use.

I started finding joy in cooking when I tried out things that worked for my taste buds. What works for my taste buds may not work for yours.

The good thing is we all have an idea of what we like, so if I use shrimp in this burrito bowl you may want to replace it with chicken that’s fine. You may also be a vegan who would instead replace the shrimp with mushrooms or jackfruit and that’s also fine.

I’m just here to give you an idea and you can create something fairly similar depending on what you want and most importantly, what’s in your kitchen.

Things I used for my burrito bowl

Pico de gallo: Tomatoes, onions, cilantro, jalapeno pepper slices, lemon, or lime.

If you don’t have all the ingredients above, chopped fresh tomatoes will do.

Cauliflower Rice: I usually get a big bag of frozen cauliflower rice from Costco, but they have a ton of pre-packaged ones you can buy online or at your local grocery stores. This is for those of you who don’t want to rice the cauliflower yourself

  • Shrimp – I usually go with the best-priced wild-caught shrimp I can find at my local grocery store.
  • Black Beans – Canned black beans from your local grocery are usually the easiest to work with.
  • Kale – Organic seasoned kale. I usually pick up a bag or box of baby kale to have for brunch or dinner throughout the week. It’s easy to grill this and add as a side dish.

How to Make Shrimp Burrito Bowl

I usually start off by making the pico de gallo to give it a few minutes to marinate. If I’m making this for myself I mix together a handful of organic tomatoes, 4 tbsp of onions, cilantro, 3 – 4 slices of jalapeno pepper, 3 tbsp of lemon/lime, and one tbsp of the juice from the jalapeno pepper slices jar. These measurements are optional and as I always say you can make this according to how you like it.

Food Tip: My main goal when making cauliflower rice is to cook out the moisture. I use a large non-stick skillet and wait for my frozen cauliflower to thaw out. Majority of the time I’m using high heat with. Then I add a little avocado oil and continue to cook it on high heat until the tips of the rice brown a bit.

For this recipe, I add the Sazon goya seasoning to the rice for the Mexican flavor and orange coloring. I also season with sea salt, garlic powder, and cracked pepper.

After grilling the shrimp for around 5-7 mins, the black beans for around 5 mins, and the kale for around 5-7 minutes I assemble the bowl and top it with some sauce. A shrimp burrito bowl calls for guacamole so if you’re a fan, the small premade avocado cups from Costco will come in handy.

Or you can make your own guacamole. As shown in the photos, I also add my jalapeno aioli sauce, shown in the photo below, along with my spicy mayo sauce. Don’t judge me lol.

This recipe may seem a little extravagant with the Sazon goya cauliflower rice, the pico de gallo, and the added guacamole, but you should really make it your own. If you decide to make this on a lazy day it may look more like grilled chicken, cauliflower rice, with beans, tomatoes, and the Spicy mayo sauce. I added the spicy mayo because that recipe literally calls for two ingredients. Check out the recipe here.

Whatever you decide to do, just have fun with it. I’m only giving out ideas so feel free to add to this meal idea or take away from it.
