Air Fryer Blueberry Baked Oats

I’ve never been a fan of oatmeal. Sure there are times when I wake up wanting them because they’ve been a family staple in my household, but it doesn’t happen often. I use to be more of a cream-of-wheat kind of gal. When I tried this air fryer blueberry baked oats recipe I knew that I finally found an easy oatmeal recipe that I would consistently crave.

And that is exactly what happened. I would make baked oats 3 – 4 times a week if I could. I’m sure there are times when I did do that. The recipe is fairly healthy. If you’re someone who eats oatmeal on a regular basis or if you enjoy a good blueberry muffin, but gluten doesn’t agree well with your digestion, this is the recipe for you.

Tools Needed to make the recipe:

You can use a blender for this recipe or an immersion blender. Anything you have that can blend, but honestly, the recipe should work without you blending it.

I chose to use an air fryer for this recipe to get the job done fairly quickly but feel free to use an oven or a toaster oven if you don’t have an air fryer.

Tips & Variations

I used sprouted rolled oats for this recipe. You can try using any oats you have on hand, but they may have less moisture so you may have to add more milk depending on what you use.

I have tried this same recipe by replacing blueberries with chocolate chips, but there are other variations you can try. If you’re not a blueberry fan you can try strawberries, raspberries, or blackberries. And if you’re not a fan of fruit you can try it plain or with baked chips as I did.

If you choose to follow the air fryer blueberry baked oats recipe fully know that there are incredible health benefits not only from blueberries but also the oats. Blueberries support heart health through their fiber, potassium, folate, vitamin C, vitamin B6, and phytonutrient contents.

Oats contain important nutrients. They are high in minerals like manganese, phosphorus, copper, magnesium, zinc, thiamine, and pantothenic acid.

Coconut Drizzle

I chose to make a coconut drizzle to add an extra kick to this recipe. It is one of the simplest things I’ve ever made.

You can use around 3 tbs or ¼ cup of coconut cream, add milk to get it to the consistency that you want and then play around with the sweetness.

I added 1-2 tbsp of maple syrup, but you can replace it with a monk fruit sweetener blend, stevia, or a sugar-free syrup if you’re watching your sugar content closely.

Air Fryer Blueberry Baked Oats

This is a quick and easy way to start your day. The recipe is for one serving only but you can double or triple and it should come out the same way. Enjoy!

Equipment

  • Vitamix/Blender
  • Air Fryer/Oven

Ingredients
  

  • 1/2 cup Sprouted Rolled Oats/ Any Oats
  • 1/2 Banana
  • 1 Egg
  • 1/2 cup Blueberries
  • 1/4 cup Regular or dairy free milk
  • Dash Cinnamon
  • 1/4 tsp Baking Powder
  • 1/2 tbsp Vanilla extract
  • 2-4 tbsp Sugar-free Sweetener

Instructions
 

  • Add all of the ingredients except blueberries into the blender.
  • Blend on high until the consistency is smooth for approximately 30 seconds to a minute.
  • Spray oven-safe dish or grease with oil. Pour the oatmeal mixture into the oven-safe dish.
  • Mash up however many blueberries you like. If you prefer not to mash them that's also fine. Then add the blueberries to the dish and mix in.
  • Place the dish in the air fryer at 400 degrees for 8 minutes. Take out, stir, and then place the dish back in for 2-3 more minutes. If you are using an oven bake at 350 degrees for approximately 20 minutes.
  • Take your dish out of the oven or air fryer and enjoy!

This recipe turned out extremely well and it never disappoints. There are times when I don’t have any bananas, so I leave that out. I’ve even made it without the eggs. The consistency was definitely different but it still turned out pretty good. Let me know how this recipe goes for you.
