Strawberry Smoothie Ice cream

I, like most people, love ice cream. The problem is it’s hard to find pint-sized sugar-free ice cream under $5 dollars in grocery stores. I have to say there are definitely more sugar-free options out there these days than before. Some have way better ingredients than others. The problem is the pint sizes that they usually come in go away so fast. I try to stretch them out for maybe 3 – 4 servings, but it’s not always worth it.

I decided I’m going to have to invest in an ice cream maker but before I did I came up with this strawberry smoothie ice cream recipe. No, this does not taste exactly like strawberry ice cream but the texture is pretty close. Plus I didn’t feel bad about the ingredients and when I topped it with Lily’s sugar-free butterscotch chocolate chips it was amazing.

I’ve always liked my ice cream soft, so this was the perfect texture for me. Plus it was so easy to make. One suggestion I’ll make is to place your coconut cream in the fridge the night before so it gets a little hard. It should separate the pulp from the liquid. You can use both parts but you may want to test what you need more of and then blend to check if it’s the consistency you like.

Another perk to this recipe is that the ingredients are extremely healthy. Coconut is high in manganese, which is important for bone health. It’s also rich in copper and iron which helps form red blood cells.

Strawberries are free from fat, and cholesterol and fairly low in calories. They also contain a good amount of fiber and high levels of antioxidants. You can’t go wrong with this recipe. It has simple healthy ingredients and it’s easy to make.

Ingredients
  

  • 1 1/2 cup frozen strawberries
  • 1/2 cup coconut cream
  • 3-4 tbsp sugar-free sweetener (I used monk fruit sweetener)
  • 1/2 tsp Salt
  • 1/4 cup butterscotch sugar-free baking chips (optional)

Instructions
 

  • Add the strawberries, coconut cream, sweetener, and salt to your blender of choice (I used a vitamix).
  • Blend until it gets to the consistency that you like. If it's too thick add more coconut cream liquid a little at a time.
  • When finished place it in a cup of choice and top it with the baking chips.

This is one of the simplest recipes out there. I don’t consider myself a recipe creator, probably because the ones I do come up with consist of the most basic ingredients. However, this one definitely took the edge off that day, when I was craving ice cream. Let me know what you think about it when you try it.
