Blueberry Mint Lemonade

As someone who chooses to watch my sugar intake, finding a drink is not the easiest thing for me. We don’t bring any juice, soda, or juice mix into our household and there are times when I yearn for a nice summer drink. It was a beautiful summer day when I came up with this idea and although I’m sure it’s not an original idea it was what I had in my fridge that could make a drink that was healthy, yet appealing to what I craved that day.

Feel free to try other variations of this recipe. I’m thinking raspberry, strawberry, and blackberry should also work well, however, you may need to increase or decrease the lemon juice or sweetener depending on how you like it.

If you aren’t a fan of pulp, after using the immersion blender you may want to pour the juice into a strainer. I, on the other hand, don’t mind the pulp, and sometimes on a lazy day, I don’t even use my blender. I will mash up my blueberries on a plate, squeeze a lemon into a jar, and add the blueberries, water, sweetener, and ice. Then I’ll mix it up and drink.

I really hope you enjoy this recipe. It’s also a good way to get in healthy fruits, especially if you’re not a smoothie person. Lemons and blueberries are packed with amazing health benefits, so feel free to indulge. Just make sure you use a good sweetener that doesn’t increase your blood sugar levels much. I used a monk fruit erythritol blend and 1 -2 tbsp of maple syrup if you like.

This summer drink will put you in the summer mood. Its a mixture of healthy with a bit of refreshing.

Ingredients
  

  • 6-8 cups water
  • 1 cup blueberries
  • 3/4 cup lemon juice freshly squeezed
  • 1/2 bunch mint leaves
  • 1/2 cup powdered sugar-free sweetener (monk fruit was my choice)
  • 2 tbsp maple syrup

Instructions
 

  • Get a small bowl, add the blueberries and mint and mash the fresh blueberries and mint together with a fork.
  • Add water, lemon juice, the blueberry and mint mixture, sugar and maple syrup to a pitcher.
  • Then take an immersion blender and blend the juice mixture together. If you don't have one use a mixer or blend really well with a spoon.
  • Place some ice into your cup, pour in the juice and drink away.
